Bolognese Sauce: A Taste of History, Tradition, and Authentic Flavor

Introduction:

Bolognese sauce, or "ragù alla bolognese," is more than just a recipe—it's a culinary icon with roots deep in Italian history. Originating in Bologna, the capital of Emilia-Romagna, this rich, meat-based sauce dates back to the late 18th century. The term "ragù" itself comes from the French word "ragout," hinting at French influences on this timeless dish.

In 1982, to preserve its authenticity, the Bolognese delegation of the Italian Academy of Cuisine officially registered the traditional recipe, ensuring that its preparation and ingredients would remain true to its origins. While modern variations have emerged worldwide, the essence of Bolognese remains a slow-cooked, hearty sauce that’s a testament to Italian culinary heritage.

Now, we’re sharing our recipe so you can bring this iconic sauce into your own kitchen.



Authentic Bolognese Sauce Recipe

Ingredients for 8 people:

  • 2 tbsp butter

  • 3 tbsp olive oil

  • 4 gloves of garlic, minced

  • 2 medium onion, finely diced

  • 2 carrot, finely diced

  • 2 celery stalk, finely diced

  • 400g ground beef

  • 400g ground pork

  • 1 cup dry red wine

  • 600gr crushed tomatoes

  • 2 tbsp tomato paste

  • 4 cup vegetable or chicken stock

  • Salt and pepper to taste

  • 4 bay leaves

Instructions:

  1. Prepare the Soffritto Heat olive oil and butter in a large pot over medium heat. Add the garlic, onions, carrots, and celery, cooking until soft and fragrant.

  2. Brown the Meat Add the ground beef and pork to the pot. Cook, stirring occasionally, until browned and cooked through.

  3. Deglaze with Wine Pour in the white wine, scraping up any browned bits from the bottom of the pot. Let it simmer until the wine has mostly evaporated.

  4. Add Tomatoes and Stock Stir in the tomato paste (or crushed tomatoes) and beef stock. Reduce the heat to low and let the sauce simmer gently for 2-3 hours, stirring occasionally.

  5. Season to Taste Add salt and pepper to taste. For an herbal twist, finish with a sprinkle of our signature green salt.
